2 lbs. (about 4) sweet potatoes cut into 3/4" cubes
3 cups fresh mangos, course dice
1/4 cup packed dark brown sugar
3 Tbl. K-4 Keenan's Killer Sunshine Mango Hot Sauce
2 Tbl. melted butter
8 slices cooked bacon, crumbled
Preheat oven to 400 degrees F.
Combine sweet potatoes and mangos in a large bowl. Stir in all remaining ingredients, except bacon.
Prepare a rimmed baking sheet with melted butter. Spread the sweet potato mango mixture onto the baking sheet.
Bake for 30 minutes, and then turn the potatoes and mangos to brown both sides.
Cook for an additional 30 minutes and transfer to a serving dish. Toss with bacon just before serving.
