2 lbs. fresh whole carrots, peeled and sliced on diagonal about 3" long
2 Tbl. extra virgin olive oil
1 Tbl. pure maple syrup
2 Tbl. honey
2 Tbl. K-3 Keenan's Killer Be Afraid Hot Sauce
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1-1/2 tsp. ground coriander
1 Tbl. white sesame seeds
1 Tbl. minced fresh thyme leaves
1 Tbl. thinly sliced fresh chives
Preheat oven to 450 degrees F.
Evenly arrange the carrots on a baking sheet in a single layer. Drizzle with the olive oil, maple syrup and K-3 Keenan's Be Afraid Hot Sauce. Sprinkle with salt, pepper and coriander.
Toss the carrots to evenly coat with the ingredients, and then spread evenly in a single layer. Roast the carrots for 15 minutes, then stir to redistribute. Return to the oven for an additional 15 minutes stirring every 5 minutes or so.
Cook until the carrots are tender and beginning to show caramelized edges. Remove from the oven and sprinkle with sesame seeds, thyme and chives. Season with salt and pepper and transfer to a serving dish. Serve hot.
