Ingredients:
5 lbs. chicken wings
1/4 cup ground coriander
1 tsp. ground cumin
1 tsp. ground cinnamon
2 Tbl. kosher salt
1/4 cup extra virgin olive oil
3/4 cup K-3 Keenan's Killer Be Afraid Hot Sauce
1-1/2 sticks unsalted butter, melted
1/2 cup chopped fresh cilantro
Grated zest and juice of 3 limes
Celery sticks
Blue Cheese salad dressing
Directions:
In a large bowl, toss the wings, coriander, cumin, cinnamon, salt and olive oil. Cover and refrigerate for at least 4 hours or overnight.
Preheat oven to 375 degrees. Line baking sheets with foil or spray with non-stick spray.
Arrange the wings on 2 large baking sheets and roast for about 1 hour or until the wings are crisp and golden brown.
In a mixing bowl, combine K-3, melted butter, cilantro and lime zest and juice. When the wings are done, toss them in the K-3 butter sauce, remove and transfer to a platter.
Serve hot with plenty of napkins. Good also served with celery sticks and blue cheese dressing.
