K-Sauce™ is outstanding on pretty much any protein, but here, we add a little zing to some flank steak.
1 lb. to 1.25 lbs. flank or skirt steak
1/2 onion peeled and quartered
1 clove of garlic, peeled and sliced
1 Tbl. olive oil
1 Tbl. K-1 Keenan's Killer Original Hot Sauce or to taste
1/4 cup olive oil
1/3 cup chopped green bell pepper
1/2 cup chopped onion
1 clove of garlic peeled and minced
1/4 tsp. salt
1/4 tsp. black pepper
1 tomato peeled, seeded and coarsely chopped
Wash the steak and put it in a slow cooker. Add the onion, garlic, olive oil, K-1 Keenan's Original Hot Sauce and water to cover by 2 inches. Cook on high until boiling and then turn it down to low for at least 3 hours.
When the meat is tender, remove it from the slow cooker and drain it. Let the meat cool and shred it and set aside. Strain and reserve 1 cup of the cooking water.
In a large skillet, heat the olive oil over medium heat. Add the bell pepper, onion, garlic and sauté until the onion softens, about 2 minutes. Add the salt, pepper, another Tbl. of K-1 (or to taste) and the tomato and simmer for 1 minute. Stir in the shredded meat and simmer about 15 minutes. The meat should be a little moist, if needed, add several Tbl. of reserved cooking liquid.
Serve hot over mashed potatoes or rice. YUM!
